Cheesy Bean Dip


Here's a easy to make bean dip that's great for munching. Fattening as all get out, though, which is why I haven't been able to have it for a while.



  1. Brown ground beef in a large pan. Discard grease.
  2. Add onions and garlic and, if desired, hot peppers. Cook until onions are done.
  3. Stir in salsa and refried beans. Continue cooking until hot.
  4. Add cheddar cheese. Cook and stir until cheese melts and blends in.

If you like spicy food, use the hottest salsa you can find (I use "Salsa Ranchera"), and add your favorite hot pepper along with the onions and garlic.

Serve with corn chips for dipping. You might think the mexican style chips would be best, but actually I prefer good ol' Frito's for this dip. I prefer the strong corn taste, but in addition the dip typically is too thick to be easily dipped by more fragile chips.
