Lemon Bars


Jan's mother's old recipe (from "Joan") makes a good lemon bar. This is the recipe made famous by the 2005 Abbie 4-H International Cooking Project.


Pastry Crust

  1. Preheat oven to 350°F.
  2. Mix pastry flour with powdered sugar.
  3. Cut in butter.
  4. Press into 13″x9″ pan
  5. Bake at 350°F for 20 minutes.

Filling

  1. Beat eggs.
  2. Add sugar, sifted flour, and lemon juice.
  3. Pour over Pastry Crust.
  4. Bake at 350°F for 25 to 30 minutes.
  5. Remove from oven.
  6. Sprinkle with powdered sugar while hot.
  7. Allow to cool before cutting.
