Lemon Bars
Jan's mother's old recipe (from "Joan") makes a good lemon
bar. This is the recipe made famous by the 2005 Abbie 4-H
International Cooking Project.
Pastry Crust
- 2 cups pastry flour
- 1/2 cup powdered sugar
- 1 cup (2 sticks) butter or margerine
- Preheat oven to 350°F.
- Mix pastry flour with powdered sugar.
- Cut in butter.
- Press into 13″x9″ pan
- Bake at 350°F for 20 minutes.
Filling
- 4 eggs
- 2 cups sugar
- 4 tablespoons sifted flour
- 4 tablespoons lemon juice
- powdered sugar for sprinkling
- Beat eggs.
- Add sugar, sifted flour, and lemon juice.
- Pour over Pastry Crust.
- Bake at 350°F for 25 to 30 minutes.
- Remove from oven.
- Sprinkle with powdered sugar while hot.
- Allow to cool before cutting.
